Persimmon and New Harvest Olive Oil


1 ripe persimmon
1 small Mozzarella di Bufala Campana PDO
“Number One” new harvest extra-virgin olive oil


A special recipe with a definite flavour, but – above all – fast and easy. Its secret lies in using very fresh and good ingredients.
Just mash the pulp of a ripe persimmon with a hand blender until you get a creamy consistency. Now spread the bottom of a serving dish with the persimmon cream. Place the buffalo mozzarella in the centre of the persimmon cream and pour a thread of Number One olive oil.
Three simple ingredients that will create flavour contrasts and win your palate over. Each ingredient will be an explosion of flavours surprising you one after another.
It is an excellent amuse-bouche.
