Comfort Food Soup

Ingredients

large bunch of basil
3 nice Pisanello tomatoes (if they are no longer on the market, 4 nice peeled tomatoes)
5-6 medium-sized courgettes
1 long white onion
chilli pepper to taste
“Number One” Tuscan extra-virgin olive oil

Preparation

Cut the onion into very thin slices. Wilt the onion with well-washed basil in a little cooking water from the beans.
Reduce it, add a bit of salt and all the courgettes cut into round slices. Watch out that slices must neither be too thin nor too thick; they need to cook for half an hour, if they are too thin, they will become a mush!
Now add the tomatoes, previously peeled, without seeds and cut into thin slices.
Then add all the beans and the remaining cooking water.
Keep cooking it until the courgettes are cooked through.
It is now ready to be eaten. If you want to prepare it for a special dinner, you may also add mussels, previously opened and shelled, and some well-filtered mussel cooking liquid.
Add raw oil and a good grinding of pepper!
