Little Octopus on toasted Bread with Rosemary


500 g already cleaned little octopus
1 cup tomato sauce
1 glass white wine
3 thick slices of country bread
chilli pepper to taste
very fresh rosemary
salt and “Number One” extra-virgin olive oil


Quickly wash the octopuses, and then put them in a very hot pan.
In a few seconds, their colour will turn into pink; you can thus lower the gas and cover the pan with a lid.
In 5 to 10 minutes, the octopuses will release their water; let them cook in their water on medium-low heat.
Prick with a fork to check if they are soft.
Add the tomato sauce, chilli pepper and wine. Allow to reduce without lid until all the wine has evaporated.
Toast the slices of bread, and then rub them with rosemary when they are still warm: their smell will be irresistible.
Have you noticed that no oil was added during cooking?
Well, when the octopus is well reduced, taste it and add salt if necessary. Chop it up a little and arrange on the slices of bread. Garnish with a little rosemary and pour in a thin thread of extra-virgin olive oil.
